Mint Mangoes can be found in Starlight Strand, which you'll unlock pretty early in the game - so if you've just started out and you're looking for Mint Mangoes, you're in luck. They aren't very hard to find.

First, go to the Cotton Gordo at the bottom of Rainbow Fields and feed it vegetables. You'll then be able to access Starlight Strand, where you can find the Mint Mangoes you've been looking for.
Build your jetpack if you haven't done so already since you'll need your jetpack in order to access the Mint Mangoes.
Now, with your jetpack ready to go, head to the south side of Starlight Strand and begin looking around the trees with your jetpack. You should be able to find some Mint Mangoes in this area.
How To Farm Mint Mangoes
To farm Mint Mangoes in Slime Rancher 2, you'll first need to find a Mint Mango in Starlight Strand.
Then, bring that Mango back to your base and put it in your garden depositor to create more Mint Mangoes. This way, you can have more of this fruit to feed your Slimes.
