If you don't want to halt your progress, you're going to need some consumables. Using recipes and getting food will allow you to use items that replenish energy on the fly. You can eat quickly and continue your mining and thorn collecting.
Of course, your energy levels can also be increased in Disney Dreamlight Valley so that your work can last longer during the day's adventures.

Increasing the energy you have is mostly a passive endeavor. The most consistent way to increase levels is by simply playing the game and leveling up. Each level that you gain as a character will increase your overall reserves so that exhaustion is less frequent.
