Iron Gate has released a small patch for Valheim that aims to improve dedicated server performance.
The issue stemmed from using the Steam Datagram Relay (SDR) system for connecting to a dedicated server, where now it will use a direct connection promising to "result in much lower latency for most players".

The SDR system is still used for non-dedicated servers and, in this case, players will see no improvement in latency. Though a fix for the issues seen with SDR is expected later through improvements made to the system by Valve.
