Madam Nazar's Collectibles, including the Eagle Egg, move based on cycles. There are 6 different cycles in Red Dead Online, changing each day at 12 am GMT (8 pm ET / 5 pm PT).
Essentially, this means that you can expect that the Eagle Egg will move to one of six different locations around the map depending on which cycle is currently active in Red Dead Online.
Cycles do not activate in a specific pattern; rather than going through 1-6 chronologically, the cycles are random. As a result, you'll need to figure out which cycle is currently ongoing before you are able to locate the Eagle Egg.
